Allow Invoices generated by Online Stores to be edited

Item lines on invoices from Online Stores are locked. Our shop likes to separate youth small and medium into their own line groups as they have different sized art. The solution we were given was to list each size as their own product on the Online Store phase.
We would like to have the ability to either edit or split a line item post online store closure.

Need to be able to edit items. Item is out of stock and customer wants to switch item but the invoice can not be edited creating manual work arounds which defeats the whole system.
